I have somehow lost three of those knives. I’ve spent nearly as much on replacements as I did on the knife set to begin with. Really need to get better about knives being actively cutting, actively being cleaned, or stored in the block.

Those Zwilling knives: somehow, they don’t feel right in my hand, and I struggle to keep an edge on them that I’m happy with. I have a cheapo Santoku knife that I bought from Business Costco that is my favorite knife: great balance, but also very light, which is great when cutting something small, but tiring when cutting some thing larger or harder. So maybe a medium-sized chef’s knife... I serve as sous chef to my wife and my knife skills are important...

I’m pretty happy with my set. Though I’ll admit it has a Santoku, which while fine, is no where near as good as the Zwilling Santoku I got for my mother, which is a phenomenal knife.
